As Ms not ready to add new category in which I can write this I am writing under this one.


Some more useful general tips on cooking-


TIPS FOR COOKING


-


1)If your bread has become little hard just steam it for sometime it will again become soft and fresh.


2)If you like fried papads but are worried about calories just apply little oil on papad and then roast it will taste somewhat like it.


3)If you want to make crispy samosas instead of using maida(plain flour) use wheat flour and in that put little lime juice and it will turn out crispy and will be healthier to eat.


4)Out of the left over rotis make khakharas and break it into small pieces and you can use this in the bhel mixture instead of using fried puris will cut down on calories and will be healthy.


5)If you are calorie conscious no need to fry the bhaturas.Out of the same dough make rotis and after its cooked apply little butter on it will taste delicious and will have less calories.


6)Before grating the cheese coat the grater with little oil the cheese will not stick to the grater.


7)To make chole when you put chole to boil in it add 8-10 pieces of amla not only will it give that dark colour but will also help to cook the chole fast.


8)By putting a layer of water on yogurt(curd) and then storing it in the refrigerator would ensure that yogurt stays fresh for a long time.


9)If high protein foods like chicken and fish are marinated for sometime in lemon juice we will require less oil for frying.


10)While boiling anything in the pressure cooker if we put in a piece of used lime the cooker will not get stained.


11)While boiling cracked eggs if we add 1 teaspoon of vinegar to water the eggs will not leak.


12)Keep rolled puris in the fridge for 10 mins it will consume less oil and puris will be crisper.


Now for my favourite and easy recipes-


RICE OR SPAGHETTI BALLS


-


2 teacups boiled rice(even left over will do)or boiled spaghetti


2 teacup milk


2 tablespoon butter


2 tablespoon plain flour(maida)


3 finely chopped green chillies


1/2 teacup plain flour


bread crumbs


oil for frying


salt to taste.


Melt the butter in a vessel.Add 2 tablespoon flour and cook for 1 min.Add the milk and go on cooking till the mixture becomes thick.Cool and then add rice or spaghetti, green chillies and salt to taste(can even add herbs if you want).Shape into small rounds.Mix 1/2 teacup flour and 1 teacup of water and make a paste.Dip the balls in this paste and roll it into the bread crumbs and then deep fry into hot oil.


NACHOS WITH CHEESE SAUCE

For the Nachos


-


1 teacup maize flour


3/4 cup plain flour


2 teaspoon oil


3/4 teaspoon salt


oil for deep frying


Mix the flours.Add the oil and salt and make a soft dough by adding water.Roll out thin rounds abt 4' in diameter.Prick lightly with a fork.Cut the rounds into half and each halves into 3 pieces shape like a triangle.deep fry them.


For the Cheese sauce


-


1 cup grated cooking cheese


1/2 cup milk


1 tbsp butter softened


1 teaspoon mustard powder


1/2 teaspoon red chilli powder


salt to taste.


Mix all the ingredients together till a smooth paste is formed.


In a casserole spread the nachos and spread sauce on top.Bake in a hot oven at 250 C for 10 mins.
