Mutton recipes.

For all mutton lovers, here are some really yummy and mouth-watering mutton recipes to prepare at home. During any occasion, or party one can easily prepare some popular mutton dishes to make the guests happy and appreciate your culinary talent.

Hyderabadi mutton biryani has it origin in Hyderabad, the capital city of Andhra Pradesh in India. It is a very hot and spicy dish that was once the favorite of the great Mughals.

Ingredients: 1 kg rice1 kg mutton1/4 kg ghee10 grams cardamom10 grams cinnamon10 grams cumin seed10 grams cloves40 grams ginger20 grams garlic100 grams green chilies50 grams fried onion1 bunch coriander leaves1bunch of pudina leaves2 lemons1/4 cup of curd

Method: Wash the mutton pieces and take it in a vessel. Grind green chilies, ginger, garlic, spices, fried onion, and mix them well. Then add this mixture with the washed meat. Next, add curd and mix the stuff thoroughly. Leave the material for half an hour to marinate.
Take 2 liters of water in a vessel and put it on the stove for boiling. When water starts to boil put the rice in the vessel. After some time take out the semi-cooked rice and spread it on the meat and spices mixture as a layer. Take some more rice and spread as a second layer. Finally, spread the fully cooked rice evenly on the meat and spices.
Prepare a mixture with one cup of boiled water and 1/4 kg ghee and spill it on the rice. Next put a plate on the vessel and seal the edges with dough. Put the vessel on the stove and cook for about 15 minutes on a medium flame. Finally, turn off the stove and leave the stuff for 15 minutes.

To make handi ghost, one requires the following ingredients: 5 kilograms of mutton1 chopped onin1 tablespoon of ginger1 tablespoon of garlic 1 big black cardamom 1 cinnamon stick2 cloves 4 black peppercorns 2 cardamom pods 2 tablespoon red chili powder ¼ tablespoon turmeric powder 1 ½ tbsp. salt½ tablespoon of all spice1 tablespoon wheat flour mixed with ¼ cup water¼ cup plain yogurt½ cup cooking oil

Directions: In a handi or deep frying pan, heat cooking oil until it becomes well hot. Add onions and fry it brown. In the pan, add all of the spices except the meat, plain yogurt and flour. And fry spices for about 5 to 10 minutes.
Add meat and fry the meat with spices for 2 to 3 minutes. Add plain yogurt and mix for 1 to 2 minutes. Add 2 cups of water and allow it to boil. While boiling, cover and let the mutton cook on medium to low heat till it becomes soft. Add flour and water mixture and mix and continue cooking covered on low heat for another 15 to 20 minutes. Finally serve hot.
