I thought I will write something different, something new. I have been cooking food for the past 7 years on a regular basis and before that the only food I could cook was maggi. Today I share a small experiment I did yesterday. Usually when I cook pasta, I just mix pasta sauce with cooked macaroni and on occasions I make the elaborate brinjal( or eggplant) parmesan.
For the recipe I tried yesterday you need : 1 capsicum , 1 tomato, 1 cup spinach , 2 cup bella mushrooms, 5 cloves of garlic, olive oil, salt, basil and oregano seasoning, Macaroni (anything except spaghetti or angel hair should be good) and some pesto sauce.
Method: Chop the mushrooms, garlic and capsicum. Capsicum the smaller the better. Heat some olive oil and when it is hot enough toss the mushrooms in it. Boil some water in a separate vessel and toss spinach in the boiling water. Spinach will turn bright green in a few minutes when it can be taken out. Please throw away this water and take some fresh water in the same vessel and bring it to boil.
The mushrooms would be leaving a lot of water and would have shrunk in size, strain the water and add the capsicum and spinach to it. They should cook with out water so better not to cover it while it cooks.
In the other vessel where the water has come to a boil add a table spoon of salt and then toss the macaroni in. Macaroni would take a while to cook, for me it takes 15 minutes. When macaroni is tender, it can be mixed with the rest of veggies in the other vessel. Salt, black pepper can be added to taste while oregano and basil can be added for flavor.
Now is the twist. I never really talked about tomatoes, usually I will fry tomatoes in oil like normal Indian gravy but this time I cut them in circles and put them in the oven to broil for a few minutes. Tomatoes became crisp, I sprinkled some salt on them and placed on the pasta which you too can follow.
If you have some pasta sauce or pesto sauce, then you may add but only a little or else the pasta sauce will overpower the other flavors.
